Best Shepherd's Pie Ever

If you like tarragon and comfort food, this hits the spot!

Ingredients

4 Med size potatoes

1/4 c Cream cheese

1/3 c Sour cream

4 tbs Butter

Milk, if mixture is too thick.

1 lb Ground Beef or Veal (low fat does very well

4 c Beef broth

2 or 3 tbs Corn starch

3/4 c Frozen veggies (I prefer w/o lima beans)

1 tbs Tarragon

1 tsp Paprika

Preparation

Preheat oven to 400 degrees.

Cube and boil potatoes until tender. Drain. Mash with cream cheese, sour cream, and butter. Salt and pepper to taste. Add milk, if mixture is too thick. If you don't like cream cheese or sour cream, just follow your own mashed potatoe recipe.

Cook ground meat. Drain grease.

Boil broth and thicken with corn starch.

Mix meat, enough gravy for it to be very juicy (but not swimming), vegatables, and tarragon. Fill pie dish.

Spoon mashed potatoes on top, and even out--you will have peaks. Sprinkle with paprika.

Bake at 400 until peaks are browning, about 45 minutes.

Cook's Notes

You can make before hand. It keeps for 4 days in the fridge. Serve with Crescents. Yum!!
