In a large bowl beat egg whites with electric mixer for 1 minute or until light and foamy.
Add broccoli, red peppers, garlic, and scallions; add salt and pepper to taste.
Coat a 9 inch pie pan with no-stick cooking spray.
Pour the egg mixture into the pan and bake at 350F for 25 minutes or until egg whites are set.
Remove and allow to sit for 5 minutes
Loosen the edges with a spatula, cut into wedges and stir.
