Elk Cocktail Meatballs

Make-ahead idea for using some of that wonderful wild game. Can be served hot or cold.

Ingredients

2 lb. Ground meat

1 Egg, slightly beaten

1/2 tsp Pepper

2 tsp Grated onion

1 c. Fine bread crumbs

1 tsp Salt

1/2 c Milk

Sauce:

1 c Barbeque sauce

2 1/2 c Pineapple juice

1/4 c Flour

Preparation

Mix together the first 7 ingredients. Form into small meatballs (about 1 inch in diameter). Brown in 1-2 tsp hot shortening. Mix sauce ingredients together, whisk to blend. Pour sauce over meatballs in casserole dish; bake at 350 degrees, for an hour and a half. Serve hot or cold, with toothpicks.

Cook's Notes

This could be done in a crockpot; check your specific instructions for timing. Would be easy to serve at a buffet in the crockpot; keeping last bites as good as the first.
