1 Serving cooking spray (5 one-second sprays per serving)
2 Large egg(s)
1/2 cup Fat-free egg substitute
1 cup Cooked broccoli chopped
1 Medium shallot(s) minced
1/4 tsp Table salt
1/4 tsp Black pepper
1/4 tsp Dried thyme crushed
1/8 tsp Hot pepper sauce or to tasted
2 tbsp Fat-free sour cream
Preparation
Coat a large nonstick skillet with cooking spray. Beat eggs and egg substitute in a medium bowl. Add broccoli, shallot, salt, pepper, thyme and hot pepper sauce. Pour into skillet and cook over medium heat until set, about 6 to 8 minutes. Cut into wedges and top with dollops of sour cream.
