Ingredients
2 cups Cottage cheese
1 10 oz. Pkg frozen, chopped spinach, thawed, well drained
1 cup Shredded mozzarella cheese
4 Eggs, beaten
1 7 oz. Jar roasted red peppers, well drained, chopped
1/3 cup Grated Parmesan cheese
1 tsp. Dried oregano leaves
Preparation
Mix all ingredients. Pour into buttered 9-inch pie plate. Bake at 350 degrees F for 40 minutes or until center is set. Garnish with red pepper slivers.
Variation: substitute 1/2 cup chopped red pepper for roasted red pepper
