A very flavorful and very fluffy banana nut bread.

Ingredients
1/3 cup Shortening or butter
3/4 cup Brown sugar
2 Eggs
2 Overripe bananas, mashed
1 tsp Vanilla
1 1/2 cups Bleached all purpose flour
1 tsp Salt
1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 cup Soured milk (milk with 1/2 teaspoon white or balsamic vinegar mixed- let it sit out at least 1/2 hr)
1/2 cup Walnuts (optional)
Preparation
Cream together shortening and sugar. Separately mash the bananas and add beaten eggs and vanilla to bananas. Add banana mix to creamed shortening and sugar. Mix. In separate bowl combine flour, salt, baking powder, and baking soda. Add some of flour mix and then alternating with some of the soured milk to creamed sugar/shortening. Keep alternating a few times until all ingredients are combined. Mix in nuts. Bake in greased loaf pan at 350 degrees for 1 hr (until knife comes out clean).
