Quick Huevos Rancheros

This is a quick and easy way to make a favorite Mexican egg and bean breakfast. I sometimes have this for a quick and satisfying dinner.

Ingredients

1 Frozen bean or bean & beef burrito

Shredded Montery Jack cheese

2 Eggs

Cooking spray

Salt and pepper

Salsa (optional)

Preparation

Microwave the burrito according to package directions. While this is in progress, cook the eggs over easy in a pan sprayed with cooking spray. Salt and pepper to taste.

Cut open the cooked burrito into two sections and then each lengthwise. Fold back the tortilla and sprinkle the burrito filling with the cheese. Place the cooked eggs on top of the burrito halves. Add salsa (optional) on the eggs or as a side.

I'll edit in nutritional info once I have labels for the information. This recipe is higher in fat content than I'd like so I only have it as an occasional treat.
