Pesto Capellini with Broccoli and Baked Shrimp

This dish definitely sounds fancy, but you can whip it up in not time.

Ingredients

3 cloves Garlic

1 1/2 cups Fresh basil leaves

1/2 cup Olive oil, plus a little extra to drizzle on shrimp

1 pinch Ground nutmeg

AR salt and pepper to taste

20 Shrimp

1/2 cup Breadcrumbs

1/2 box Capellini (angel hair pasta)

2 cups Broccoli florets

Preparation

1. Boil water for your pasta.

2. While you're waiting for the water to boil, use a food processor to combine the garlic, basil, olive oil, nutmeg, salt and pepper. Put aside.

3. Preheat you oven to 450 degrees. Spray the bottom of a baking pan with Pam cooking spray. Add the shrimp in a single layer.

4. Top the shrimp with breadcrumbs, black pepper and salt to taste. Lightly drizzle olive oil on top of the shrimp. Bake until heated - about 10 minutes.

5. Cook pasta according to package directions. Angel hair pasta generally only takes about 5 minutes to cook.

6. Microwave the broccoli according to package directions. You can also use the frozen broccoli florets if you choose.

7. Divide pasta among 2 plates. Top with broccoli, shrimp and pesto sause. Enjoy
