Easy Vegetable Salad

I wanted a healthy recipe for vegetable salad that isn't ruined by gobs of high fat dressing and cheese. This is also a recipe for the pickiest of vegetable eaters - I have a husband who makes it very difficult for me to make vegetables because he only likes certain things. I created this recipe which is healthy and has only vegetables that he'll eat.

Ingredients

3 cups Broccoli florets, chopped

1-1/2 cups Sliced cucumber, cut into quarters

1 Large red bell pepper, cut into thin strips

1 Large vidalia onion, cut into rings then cut in half again

1/2 cup Red wine olive oil vinagrette (such as WIshbone)

2 tbsp Grated parmesan cheese

Preparation

Combine all vegetables in a large bowl. Add salad dressing and parmesan cheese and toss to coat. Chill until serving.

Cook's Notes

This recipe makes about 7 1-cup servings. The calorie content and fat content are based on my own calculations.
