Chicken Parmesan couscous salad

Easy and good on hot nights

Ingredients

1 pkg Parmesan couscous mix

1 can (20 oz) chunk chicken breast, drained

1 jar (7 oz) roasted red bell peppers, drained and cut in to strips

Jar (6-7 oz) marinated artichoke hearts, undrained

1/4 cup Chopped fresh parsley

Preparation

Make couscous as directed on package. Transfer couscous to large bowl; let stand 20 minutes to cool slightly

Add remaining ingredients to couscous; gently stir to mix. Serve slightly warm or at room temperature.
