Fruit Salad with Lime Yogurt

A refreshing summer salad that will cool your craving for something sweet without loading up on calories.

Ingredients

1 Large ripe honeydew melon, seeded and cut into 1-1/2-inch chunks
1 pint Strawberries, hulled and halved
1/4 cup Fresh lime juice
2 tbsp. Sugar
 Lime Yogurt (see recipe below)
 Lime Yogurt
2 cups Nonfat plain yogurt
1/4 cup Sugar
1 tbsp. Freshly grated lime zest
1 tbsp. Fresh lime juice

Preparation

For Fruit Salad

In a large bowl, toss melon, strawberries, lime juice and sugar. Let stand for 15 minutes, stirring occasionally. Serve with Lime Yogurt. Makes about 12 cups, for 8 servings.

For Lime Yogurt

In a small bowl, combine all ingredients, stirring until sugar is dissolved. Cover and refrigerate until chilled. (The yogurt will keep in the refrigerator for up to 2 days.)

Makes about 2 cups.

15 calories per tablespoon: 1 gram protein, 0 grams fat, 3 grams carbohydrate; 10 mg sodium; 0 mg cholesterol; 0 grams fiber.
