Smoked Salmon and New Potato Salad with Green Beans

Ingredients

SALAD:
12 -14 small red potatoes (1 1/2 lb), cut into quarters
1 (4.5 oz) pkg Smoked salmon
1 Small cucumber, chopped
1 (14.5 oz) can Cut green beans
DRESSING:
1/2 cup Sour cream
1/4 cup Plain yogurt
3/4 tsp Salt
2 tbsp Chopped fresh dill

Preparation

1. Place potates in 2-quart microwave-safe bowl. ADd 1/4 cup water; cover with microwave-safe waxed paper. Microwave on high 12-14 minutes or until potatoes are tender. Drain; rinse with cold water to cool. Drain well.

2. Remove and discard skin from salmon; flake salmon. In small bowl, combine all dressing ingredients; blend well.

3. In medium bowl, combine cooked potaties, salmon, cucumber, and green beans; stir gently to mix. Add dressing; stir gently to coat. Cover; refrigerate at least 1 hour before serving.

Cook's Notes

Packaged cooked new potatoes can be used in place of fresh potates, if desired.
