Spinach-Stuffed Turkey Meatloaf

Ingredients

1 cup Mushrooms, coarsely chopped
1/4 cup Onion, coarsely chopped
1/2 cup Zucchini, shredded
10 oz Frozen chopped spinach, thawed & drained
1/4 cup Grated Romano cheese
1/4 cup Grated Parmesan cheese
1 lb 99% lean ground turkey breast
3/4 cup Quaker Oats (quick or old fashioned, uncooked)
1/2 cup Fat-free milk
1 Egg white, lightly beaten
1 tbsp Italian seasoning blend
1/2 tsp Salt (optional)
1/4 tsp Pepper (optional)

Preparation

Heat oven to 375. Lightly spray medium skillet with canola cooking spray. Cook mushrooms, onion and zucchini in skillet over medium-low heat for 4 minutes or until onion is tender; remove from heat. Add spinach, Romano cheese and Parmesan cheese; mix well. Set aside. In large bowl, combine turkey, oats, milk, egg white and Italian seasoning; mixing lightly but thoroughly. Add in the skillet ingredients and mix. Spoon into a small foil loaf pan that has been sprayed with canola cooking spray.

Bake 35 to 40 minutes or until thermometer registers 170 degrees and juices show no pink color (top should start to brown lightly). Remove from oven and let stand 5 minutes before slicing into 6 sections.

I make a dish like this, but instead of the Parmesan and Romano cheeses I use greek-style feta cheese and sun-dried tomatoes and top it with cooked turkey bacon. This is a flavorful and delicious meal!!

I did not care for this dish. My children and husband did not like it either. I am going to delete it from my Autumn/Thanksgiving Season cookbook.
