1. Cook bacon and crumble; set aside. Hard boil eggs, peel and chop; set aside.
2. In a medium bowl, stir together mayo, eggs, bacon, celery, chives, green onion & pepper. Salt, if desired.
3. Toast bread slices. Divide 1/4 egg salad between sandwiches. Cut diagonally & garnish top with fresh whole chives. Makes 4 sandwiches or 8 half sandwiches.
