Bitsy's Banana Bread

Moist banana bread, made with a sweetener that tastes like brown sugar called "sucanat"

Ingredients

1/2 cup Butter @ room temperature

1 cup Sucanat

3 Ripe bananas, mashed

2 Eggs, separated

1 tsp. Mexican vanilla

1 tsp. Lemon juice

1 tsp. Baking soda

1 1/2 cups Wheat all-purpose flour

1 1/2 tbsp. Hot water

Preparation

Heat oven to 350 degrees. Butter a 9x5 in. loaf pan. Cream butter and sucanat in a large bowl. Add bananas, eggs yolk, vanilla, lemon juice, and baking soda; mix thoroughly. Stir in flour. Beat egg whites until stiff; gently fold into batter until well blended. Stir in hot water. Scrape batter into prepared pan. Bake until a wooden pick inserted in center comes out clean, about 45 minutes. Turn out of pan and cool completely.

Cook's Notes

The sucanat is a great substitute for sugar and if you have sugar problems it is easier on your body and doesn't taste like "splenda" or "sweet-n-low" or "equal". Very good mimic for sugar. Try using "xylitol" for replacement for sucanat too. "Xylitol" has no sugar-highs or lows. This is a great banana bread!
