Absolutely delicious (and good for you) sweet carrot salad. Takes just 30 minutes!

Ingredients

1 lb. Pineapple, diced and drained

1 lb. Carrots, peeled and shredded

1 c. Shredded coconut, unsweet

8 oz. Coconut milk

1 c. Raisins

2 tbsp. Honey

Preparation

Mix together all ingredients in a large salad bowl. Chill for at least 30 minutes. Enjoy!!!

Absolutely delicious! Goes great as a side dish with anything, like some nice grilled chicken!
