Beef w/asparagus & Cherry tomatoes

This is a quick & very colorful meal; for a change of pace, substitute sugar snap peas or green beans for the asparagus

Ingredients

24 Asparagus spears, cut diagonally into 1/2" pieces

10 oz. Lean boneless beef sirloin, cut into 1/4" strips

1/2 tsp Salt

1/4 tsp Freshly ground black pepper

1/2 cup Diagonally sliced scallions (1/2" slices)

1 Garlic clove, very thinly sliced

24 Cherry tomatoes

Preparation

In large nonstick skillet, combine asparagus and 1/4 cup water; bring liquid to a boil. Reduce heat to low; simmer 2 min., until asparagus is just tender and water is evaporated. Sprinkle beef on all sides with salt and pepper; add beef, scallions and garlic to cooked aspsragus. Cook, stirring frequently, 4 min., until beef is cooked through. Add tomatoes; cook, stirring frequently, 2 minutes, until tomatoes are just heated through.
