Cabbage slaw w/maple-bacon dressing

Ingredients

4 slices Bacon, cut in half
1/2 cup Apple cider vinegar
1/3 cup Maple syrup
1/2 tsp Celery seed
1/4 tsp Black pepper
3/4 cup Sliced leeks
3 cups Shredded green cabbage
1 1/2 cups Shredded red cabbage
1/2 cup Grated carrots

Preparation

add vinegar, syrup, celery and pepper to bacon skillet, boil and add all but 1 tbsp to separate bowl.

cook leeks over med-low till slightly softened; add cabbage and carrots and dressing for another 3 minutes. top w/bacon & serve
