Ingredients

1 Whole-wheat pita bread

1/4 cup Grated mozzarella cheese

2 tbsp. Pizza or tomato sauce

Veggies of choice: mushrooms, bell pepper, onion, olives, artichoke hearts, etc.

Preparation

1. Preheat the oven or toaster oven to 350 degrees. Split the pita bread halfway around the edge and spoon in the cheese, tomato sauce, and any toppings. Wrap the pita in aluminum foil and bake for 7 to 10 minutes or until the cheese melts. Makes 1 serving.

i do this all the time but what i do is i open the pita only a little bit and put in the sauce and the cheese and what ever els and then you just zap it in the microwave for like 1 minute and it is done and you dont have to worry about sauce because it is inside the pita makeing it fun for kids!!

This was quick and easy. The only problem I had was that the sauce soaked through the pita and the pita stuck to the foil. I think I might spray the foil with non-stick spray next time to prevent the sticking. I fixed the sauce problem by layering the veggies in first, then drizzling the sauce over them, then doing the pepperoni and cheese on top. Overall, very tasty and quick! Despite my husband's love for fattening toppings, I made it healthy by using turkey pepperoni, low-sodium sauce, and part-skim mozzerella, and he never even noticed! :)
