Triskalon's Apple Stuffing

This is incredible with cornish hens or duck but goes well with any poultry. I created this to offset the sweet flavor of my Raspberry Tangerine sauce.

Ingredients

4 slices Wheat bread toasted

1 Medium to large Granny Smith apple cored and chopped

1 cup Raisins (preferably soaked over night)

Preparation

1) After the bread is toasted leave put it in the refrigerator for about 15 minutes.

2) Chop the apple up small leaving the skins on.

3) Mix in the raisins

4) Chop the toast into quarter inch cubes.

5) Mix it all together adding spices such as cinnimon, cardimom, and nutmeg if desired.

6) optional: Let the whole thing sit in the refrigerator over night.

7) Stuff the bird(s) tightly.

Cook's Notes

This recipe will stuff a large duckling or chicken or two to 3 cornish hens. Remember that stuffing a bird adds to your cooking time by about an hour or so.
