Baked pasta with sausage, tomatoes and cheese

Ingredients

1/2 (1-lb ) pkg uncooked ziti (short tube-shaped pasta)

1 cup Chopped onion

6-8 Garlic cloves, minced

1 1/2 tbsp Tomato paste

1/2 tsp Salt

1/2 tsp Black pepper

3 (14.5 oz) cans Petite-diced tomatoes, undrained

1/4 cup Chopped fresh basil

1/4 cup Chopped fresh oregano (or 2 tbsp dried oregano)

1 cup (4 oz) shredded fresh mozzarella cheese or 4 oz string mozzarella cheese cut up

1 cup (4 oz) grated fresh Parmesan cheese

1 Red pepper, chopped

2 Small zucchini, cut up

1/2 cup Sliced mushrooms

Preparation

Cook pasta according to package directions, omitting salt and fat. Drain and set aside.

Remove casings from sausage. Cook sausage, red peppers, onion and garlic in a large nonstick skillet over medium heat until browned, stirring to crumble. Add the tomato paste, salt, pepper and tomatoes, and bring to a boil. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.

Combine cooked pasta, sausage mixture, basil & oregano, the rest of the veggies, half the parmesan cheese and all of the mozzarella cheese. Place the pasta mixture in a 4-qt casserole coated with cooking spray. Sprinkle some parmesan on top. Bake at 350 for 25 minutes or until bubbly. Top individual servings with remaining parmesan.

Cook's Notes

Very yummy! Hot sausage adds nice spice. Add a bit of red pepper flakes if you like more heat.
