Spicy Carrot Dip

A healthy, tasty alternative to creamy dips. Delicious served with (non-trans fat!) crackers, pita breads, vegetables, or even as a spread in a roll-up.

Ingredients

1 lb Carrots, peeled
2 tsp Ground cinnamon
2 Garlic cloves peeled/crushed
1/2 tsp Ground ginger
1/4 tsp Cayenne pepper
1/4 cup Olive oil
1 tbsp Wine or cider vinegar
Salt to taste
Black olives to garnish

Preparation

Steam carrots until fork tender.

Puree carrots together with all other ingredients.

Add tablespoon by tablespoon of leftover liquid (from steaming carrots) as necessary for desired consistency.

Transfer to seving bowl, chill at least an hour.

Garnish with black olives.
