Impossibly Easy Taco Pie

Ingredients

1 pound Lean ground beef
1 Medium onion, chopped (1/2 cup)
1 envelope (1.25 ounces ) taco seasoning mix
1 can (4.5 ounces) chopped green chiles, drained
1 cup Milk
2 Eggs
1/2 cup Original Bisquick® mix
3/4 cup Shredded Monterey Jack or Cheddar cheese (3 ounces)
Salsa (any variety)
Sour cream, if desired
Substitution :
For a zippier flavor, chop a jalapeño chili and use it instead of the green chilies.

Preparation

1. Heat oven to 400ºF. Grease 9-inch pie plate. Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix (dry). Spoon into pie plate; top with chilies.

2. Stir milk, eggs and Bisquick mix until blended. Pour into pie plate.

3. Bake about 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheese. Bake 8 to 10 minutes longer. Cool 5 minutes. Serve with salsa and sour cream.

Cook's Notes

Serve this dish with fresh pineapple chunks, vegetable sticks and tall glasses of lemonade for a refreshing meal. Special Touch: Top it like a taco! Pile slices of this zesty pie high with shredded lettuce, chopped tomatoes, sliced green onions and sour cream.

This was very good and went quickly. Probably hafta double the recipe for our big family. :) I would also add a little extra bisquick to thicken up the topping.

Very good, easy to make and loved the idea with adding the corn! I added a little extra Bisquick and it was done in the middle. Maybe add some crushed corn chips on the top.

Used to eat this all the time when I was younger. Now, with my family I make it but subsitute the beef with black beans since we are vegetarian. It's fantastic.

We do Taco night with baked Tater Tots or hashbrowns as the base. The kids love it and it's super easy! Just put your Tater Tots in your dish and pile the rest on! It's very filling and no mess!

This is good, but I think the Bisquik was kind of bland

If I were to make this dish again, I would drain the chillis better and drain the meat completely...the bisquick mixture was great on the edges, but mushy in the middle.

Instead of the eggs and bisquick, layer Nacho flavored Dorittos between layers of meat and serve with taco fixings.

You can substitute LLL baking mix (from the La Leche League cookbook) for the Bisquick in this recipe to increase the nutritional value and increase fiber content.
