Cheesy Chilada Casserole

We love Mexican foods and quick foods. This recipe is both! You can omit or add ingredients according to your leftovers and it's always a smash. The sauce is great for cooking a bunch at once and freezing extra for later meals.

Ingredients

1lb Lean meat of your chioce (beef, pork, chicken, substitute)

1 Med. green pepper, diced

1 Med. onion, chopped

1 clove Garlic, minced

1 can (15 oz) pinto beans

1 can 15 oz) tomato sauce

1-2 cups Picante sauce

1 tsp Ground cumin and/or chili powder

12 Corn tortillas

2 cups (8 oz) shredded Monterey Jack and/or Cheddar cheese

Suggested toppings for the table:

2 cups Shredded lettuce

1 cups Sour cream

2 cup Chopped tomato

Preparation

1.Brown meat with geen pepper, onion, garlic;drain.

2.Add beans, tomato sauce, picante sauce, cumin. Simmer up to 15 min to allow flavors to marry.

3.Spread some meat mixture to lightly coat bottom of dish.

4.Top with 6 tortillas, overlapping as necessary.

5. Top with half meat mixture; sprinkle with 1 cup cheese.

6. Cover with remaining tortillas; top with remainig meat mixture.

7. Cover with foil; bake at 350 degrees F. for 20 min.

8. Remove foil; top with remaining cheese and return to oven until melted (5 min).

9.Let stand up to 10 min before cutting so toppings are not scorched.

Cook's Notes

Be sure to use a large skillet, 10-inch at least. A single 9x13x2 in baking dish works best, but any combination of smaller dishes would work. Just be sure you layer properly. The great thing about casseroles is that you can make them your own. Have fun with new variartions until you've hit the favorite for your folks.
