Triskalon's Beans Rice and Tomatoes

This is an easy family favorite my mother used to make for us when we were kids. It doesn't take long to cook and is simple to prepare. It is also a complete and filling meal with or without meat since there is protien in the beans.

Ingredients

up to 2 cups Water

2 Boullion cubes (any flavor)

2 cups Instant rice

28 oz Can diced tomatoes

2x 16oz Cans chick peas (or beans)

1 to 2 lbs Meat (optional)

Preparation

1) Drain your tomatoes reserving the juice.

2) Add enough water to the juice to make 2 cups

3) If using meat then brown in a large skillet otherwise skip this step.

4) Pour 2 cups liquid and the 2 boullion cubes and bring to a boil.

5) Add rice and follow the directions on the package.

6)Add tomatoes and the 2 cans of drained chick peas

7) Let heat and stir often.

Cook's Notes

This is a great recipe to let a child or 2 add ingredients. My sister and I loved watching the boullion cubes disintigrate as the water came to a boil. This is a great meal in itself with a little bread and serves closer to 3 people. It can be used as a side dish also. This is another season to taste meals. My mother used to add oregano and other italian seonings. She also used to add "Brown and Serve" sausage to it which was a real treat.
