Ingredients

8 ounces Dried spaghetti (whole wheat for better nutrition)
1/4 cup Egg substitute
1/4 cup Finely shredded Parmesan cheese
1/2 of 10-ounce Package frozen cut spinach, thawed
3/4 pound Turkey or lean ground beef
1/3 cup Chopped onion
4 cups Spaghetti sauce
3/4 cup Shredded part-skim mozzarella cheese (3 ounces)
1 Green, red or yellow bell pepper
Non-stick cooking spray

Preparation

1. Preheat oven to 350 degrees F. Spray an 8-inch square baking dish with non-stick cooking spray.

2. Cook spaghetti according to package directions, omitting salt and oil; drain. Toss with egg substitute and Parmesan cheese. Place in bottom of prepared baking dish.

3. Drain spinach in colander, pressing out excess liquid. Spray large non-stick skillet with cooking spray.

4. Cook turkey (or ground beef) and onion in skillet over medium-high heat until meat is lightly browned, stirring to break up meat. Drain off any fat.

5. Stir in spinach. Stir in spaghetti sauce. Spoon on top of spaghetti mixture in dish.

Sprinkle with mozzarella chesse. Use small cookie cutter to cut decorative shapes from bell pepper (stars, etc.). Place on top of cheese in baking dish. Cover with foil. Bake 40 to 45 minutes or until bubbling. Let stand 10 minutes. Cut into squares and serve.

Time Saver: Make two casseroles at a time so you have one to serve, and one to freeze and reheat later.

Easy to make and very tasty. Husband and 2 year old loved it. Was even good leftover. With only 3 of us, could have frozen half of it.

Made this recipe for the first time and my family absolutely LOVED it! We demolished half the recipe (with my 7-yr old asking for 2nds (which NEVER happens!) So flavorable and sooo good! We'll definitely be having this again (and again, and again, and again!!!) Thank you!

This was a big hit. I used soy crumbles instead of beef or turkey to make it a vegetarian dish. Everyone enjoyed!

My kids never like ANYTHING new. They ate this up for dinner and lunch until it was gone!! I will make a double batch next time and freeze half for later.

I made this for the first time a couple weeks ago! And since then it has become a weekly staple! I have added different veggies in it to change it up a little bit! Our 2yr old boy and 5yr old girl LOVE this! They eat everything on their plates! My kids are usually nibblers, but not with this dinner! It's your protein, carbs, veggies, and dairy all in one very nutritious meal. Oh I use whole grain spaghetti instead!
