Ingredients
4oz Thinly sliced smoked salmon (lox)
4slices Tomato
4 slices American cheese
4 Eggs
1t. Vinegar
4 1/2 English muffins lightly buttered
1 Envelope Knorr Hollandaise sauce mix
Preparation
Prepare hollandaise sauce useing directions on package.
Butter english muffins and hold warm.
Poach eggs in water w/ vinegar 3 - 4 minutes. Use an egg poacher if desired.
Place 1 tomato slice on each muffin 1/2, followed by 1 portion each salmon, poached egg then cheese.
Drizzle hollandaise sauce over each muffin and serve hot.
Cook's Notes
Tip: Try adding some fresh chopped dillweed, cayenne pepper or chili powder to spice things up.
Great served for brunch with chilled Champagne mimosas of cranberry juice.
