Ingredients

4oz Thinly sliced smoked salmon (lox)
4slices Tomato
4 slices American cheese
4 Eggs
1t. Vinegar
4 1/2 English muffins lightly buttered
1 Envelope Knorr Hollandaise sauce mix

Preparation

Prepare hollandaise sauce useing directions on package.

Butter english muffins and hold warm.

Poach eggs in water w/ vinegar 3 - 4 minutes. Use an egg poacher if desired.

Place 1 tomato slice on each muffin 1/2, followed by 1 portion each salmon, poached egg then cheese.

Drizzle hollandaise sauce over each muffin and serve hot.

Cook's Notes

Tip: Try adding some fresh chopped dillweed, cayenne pepper or chili powder to spice things up. Great served for brunch with chilled Champagne mimosas of cranberry juice.

I've been making eggs benedict for years. I love it, and this recipe sounds wonderful! I think I will toast the english muffin halves first, and maybe place the stacked muffin under the broiler so the cheese can melt a bit before adding the hollandaise. I can't wait to try it - and Knorr absolutely has the best hollandaise.
