Baked Tilapia in Garlic and Olive Oil

Baked tilapia, marinated in garlic and olive oil. If you prefer to grill, get your grill hot and put the fish on aluminum foil; grill until desired doneness is reached.

Ingredients

4 Tilapia fillets, 4 oz. each

4 cloves Garlic, crushed

3 tbl. Olive oil

1 Onion, chopped

1/4 tsp. Cayenne pepper or white pepper

Preparation

PREHEAT oven to 350 degrees.

RUB the fish fillets with the crushed garlic, then place them in a shallow, non-reactive dish.

SPOON the olive oil over the fish until they are coated.

PLACE the onion on top of the fish.

COVER the fish and refrigerate overnight to allow the fish to soak in the marinade.

WHEN ready to bake fish, transfer to a 9x13-inch baking dish along with the olive oil, garlic, and onion.

SPRINKLE the fish with the cayenne or white pepper.

BAKE for 30 minutes.

IF GRILLING: Wrap the fish and oil, garlic, onion, and pepper in foil.

I thought that after it was all done, there was just too much garlic and onion (that's hard for me to say, LOVE them), but I'm thinking that maybe I didn't use enough pepper. It just seemed bland when it was done. I will make it again, but I will add more seasoning next time and maybe cut back on the onion and garlic just a bit.
