Ingredients
1-1/4 c. Flour
1 tbs. Baking powder
1/4 tsp. Salt
2 c. Post Raisin Bran Cereal
1 c. Fat-free milk
1 Egg, lightly beaten
1/2 c. Applesauce
1/3 c. Firmly packed brown sugar
2 tbs. Margarine, melted
Preparation
PREHEAT oven to 400 degrees.
MIX flour, baking powder, and salt in a large bowl.
MIX cereal and milk in a medium bowl; let stand 3 minutes.
STIR into the cereal and milk mixture the egg, applesauce, sugar, and margarine; add to flour mixture.
STIR just until moistened. (Batter will be lumpy.)
SPOON batter into muffin pan sprayed with cooking spray, filling each cup 2/3 full.
BAKE 20 minutes or until golden brown.
SERVE warm.
TO MAKE JUMBO MUFFINS: Spoon batter into 6 (6-oz.) ovenproof glass custard cups sprayed with cooking spray.
Sprinkle additional cereal over batter before baking, if desired.
Bake 25 to 30 minutes or until golden brown.
Makes 6 servings.
