Baked Fish with Olive Relish

Serve with a hot, steamed vegetable and whole wheat rolls. GREAT SUBSTITUTE: Swordfish steaks for the halibut steaks.

Ingredients

1/2 cup Pitted ripe olives, coarsely chopped
1/2 cup Stuffed green olives, coarsely chopped
1 tablespoon Chopped fresh parsley
1 teaspoon Balsamic vinegar
1 clove Garlic, minced
3 tablespoons Olive oil, divided
4 Halibut steaks (4 oz. each), 1-inch thick.

Preparation

PREHEAT oven to 400 degrees.

MIX olives, parsley, vinegar, garlic, and 1 Tablespoon of the oil; set aside.

PLACE fish in a shallow baking dish; brush with remaining 2 Tablespoons oil.

BAKE 20-25 minutes or until fish flakes easily with fork.

TRANSFER to serving platter; top with olive mixture.
