1. Melt butter in a large skillet over medium-high heat. Add onion rings; cook 3 minutes or until wilted, stirring occasionally.
2. Sprinkle with paprika, salt, and pepper. Reduce heat to medium-low; cook 15 to 20 minutes or until golden brown and tender, stirring occasionally.
3. Meanwhile, combine bratwurst and beer* in a large saucepan. Cover and simmer 10 minutes.
4. Pour off and discard liquid. Add oil to pan; brown bratwurst on all sides, about 6 minutes.
