Ingredients

1 Egg
1 tbsp Water
3/4 tsp Salt, divided
1/8 tsp Pepper
1 c Dry bread crumbs
4 Boneless skinless chicken breast halves
4 tbsp Olive oil, divided
5 Medium zucchini, sliced
4 Medium tomatoes, sliced
1 c (4 oz) shredded mozzarella cheese, divided
2 tsp Minced fresh basil

Preparation

In a shallow bowl, beat egg, water, 1/2 tsp salt and pepper. Set aside 2 tbsp bread crumbs. Place the remaining crumbs in a large resealable plastic bag. Dip chicken in egg mixture, then place in bag and shake to coat. In a skillet, cook chicken in 2 tbsp oil for 2-3 minutes on each side or until golden brown; remove and set aside. In the same skillet, saute zucchini in remaining oil until crisp-tender; drain. Transfer to a greased 13"x9"x2" baking dish. Sprinkle reserved bread crumbs over zucchini. Top with tomato slices; sprinkle with 2/3 c mozzarella cheese, basil and remaining salt. Top with chicken. Cover and bake at 400 for 25 minutes. Uncover; sprinkle with remaining cheese. Bake 10 minutes longer or until cheese is melted.

Very good. I only had seasoned bread crumbs so used those and as I LOVE garlic, I used garlic salt in place of the salt. It was delicious!

I might do the same and add grated cheese in the middle. Sounds yummy. Let u know how it goes. Pleasing 3 teenage chn is the big test!!

This was really good and looks impressive coming out of the oven. Next time I will try serving it with couscous or rice.

Absolutely yummy! Used thin cuts of chicken and layered cheese in between. Was a major hit for husband and 3 kids...and myself of course. Gonna keep this one as a favorite.

I thought this recipe was delicious and easy to make. August is a great time of year for this recipes with zucchini and tomatoes being in season. I added a little red onion and slice green pepper to it when I tried it and that was a great add!
