Low Fat Cha-Cha Chalupas

These tasty babies are the cat's meow when it comes to Mexican food! Each contain about 200 calories and minimal fat.

Ingredients

1 box Flat Chalupa/Tostada Shells (4 shells total)

1 can Lowfat/non-fat refried beans

3 oz Shredded REAL Mozzarella Cheese

Large Bowl of Shredded Lettuce, Chopped Tomatoes, Diced Onions (optional),

Bell Peppers (optional)

Hot Sauce - as much as you want

Chili Powder (optional)

Cumin (optional)

Chopped Cilantro (optional)

Preparation

Spicy beans: mix the refried beans with a bit of chili powder and cumin (to your personal taste preference).

Smear 2 Tablespoons of beans onto a shell, then top with a bit of cheese and hot sauce. Pop into a microwave oven or a toaster oven until cheese melts. Carefully remove. Top with salad mix and chopped cilantro if desired. Sprinkle just a tab more of cheese on top and add additional hot sauce if desired.

Cook's Notes

You may take your salad Southwest by adding a few sliced black olives, a few drained black beans, and a tablespoon of drained whole corn. Garbanzo beans also rock on this great Cha-Cha dish. Another way to enjoy the Chalupas is to add a bit of sour cream. Be sure and cut back on the number you enjoy, as everything you add makes the calorie content go up. And if the calorie content goes up, so do the numbers on your scales! Enjoy your meal wearing your favorite sombrero. Sitting on a donkey while dining, however, is not recommended. Do you by chance, know of any quality online food services? I am starting to order all my food online because of various reasons. (Health being one of them) So far I have found 2 services, Fresh Dining (an LA company) and Celebrity Foods, but you have to call them so they can talk to you about your need. I would really like any suggestions that you may have, so I can widen my list of quality places online where I can order healthy food from. These were pretty good. I added chipotle powder to the beans for some smoky heat. Very easy to make.
