Make Ahead Burritos

Seal and freeze up to 6 months

Ingredients

1 lb. Cooked chicken, beef, or pork

1 16 ounce Jar salsa

1 16 can Refried beans

4 1/2 ounce Can diced green chile peppers

1 tbsp Taco seasoning mix

3 -4 tablespoons Cooking oil

16 - 8 inch flour tortillas

1 pound Monterey Jack, or cheedar cut into sixteen 5 x 1/2 sticks

Toothpicks for securing

Preparation

1. Using two forks, shred meat to equal 3 cups.

2. In a large skillet combine meat, beans, undrained chile peppers, and seasoning. 3. Cook and stir over medium heat until heated through.

4. In another skillet heat 1 tbsp. of cooking oil over medium low heat. Heat tortillas one at a time in hot oil for about 30 secs. per side or until brown, adding more oil as needed. Set aside to cool

4. To assemble place 1/3 cup of meat on each tortilla, nar one edge. Top each with cheese stick. Fold in sides roll up startng from edge with cheese. Secure with toothpick

5. Place half of burritos in a snignle layer in a freezer container. Store as directed, which is sealed labeded up to six months. Wrap each of the frozen burritos in foil. Place on baking sheet and bake in 350 degree oven for 50 mins. Or thaw overnite and wrap in foil, place on baking sheets for 30 mins. remove foil, bake 10 mins. more until crisp and brown.

4. To serve burritos that are not to be frozen, wrap in foil place on baking sheet, Bakie at 350 for 25 - 30 mins. or until heated through. Unwrap. Serve with sour cream, salsa, and shredded lettuce salad.

Cook's Notes

If you wish to make chimichangas, fry rather than bake burritos. To fry in a skillet healt about 1/4 inch cooking oil over medium low heat. Cook in hot oil about 18 minutes.
