Ingredients

1 1/2 cup All-purpose flour
1 1/4 teaspoons Baking soda
1 teaspoon Salt
1 teaspoon Ground cinnamon
1/2 teaspoon Ground nutmeg
1/4 teaspoon Ginger
1 1/3 cup Solid pack pumpkin puree
1 cup Packed brown sugar
1/2 cup Reduced-fat buttermilk OR 1/2 cup milk and 1/2 tsp lemon juice
1 Egg
2 tablespoons Butter, softened
1 teaspoon Vanilla

Preparation

1. Preheat oven to 350 degrees

2. Sift the flour, baking soda, salt, cinnamon, nutmeg and ginger into a large bowl. Mix in pumpkin, brown sugar, buttermilk, egg, butter and vanilla until well blended. Pour into a greased 9 x 5 inch loaf pan and smooth the top.

3. Bake for 1 hour or until a toothpick inserted into the center comes out clean.

It's even faster when made into muffins. Bake at 400 degrees for 20 minutes.
