I lost this recipe from Weight Watchers, but had success after searching the web. I made this soup for our neighbor who had her bunion removed. OUCH! Her husband especially liked it, and he asked for the recipe. I used McCormick's peppered white gravy mix because that's what I had on hand. I also used a total of 64 ounces of chicken broth. Highly recommend.

was glad to find the recipe again-I had it about 5 yr ago - it's delicious! I do like to let it simmer for about 40 min though, that way the potatoes are softer and the flavor goes all through it-also good with a little shredded cheese sprinkled on top when served.

I made this, but couldn't find the FF powdered gravy. I ended up using regular powdered gravy (with 3 grams of fat/serv. and 50 cal/serv. It was a 2 cup pack with 8 servings in it). I added one whole onion and 1/4 bag of semi wilted spinach that was left in the fridge. I don't have O'brien potatos here either, so I used 5 small potatoes andI cooked it in a crock pot. When it was finished I brought the soup up to 7 cups with some water (didn't take much). A 1cup serving was about 2.7 points... and DELICIOUS!!!!!

This is got to be the best potato soup that I have had in a long time. It can't be any easier to make. I did add a little salt but, other than that I wouldn't change a thing.
