Chicken Tikka

This chicken dish is an extremely popular Indian appetiser and is quick and easy to cook. It can also be served as a main course for four.

Ingredients

450g Chicken, skinned, boned and cubed

1 tsp Ginger, minced

1 tsp Garlic, crushed

1 tsp Chili powder

1/4 tsp Turmeric

150ml Low-fat yoghurt

4 tbsp Lemon juice

1tbsp Chopped fresh coriander

t tbsp Vegetable oil

Preparation

1. In a medium bowl, mix together all the ingredients except the oil and leave to marinate for at least 2 hours.

2. Place on a grill tray or in a flameproof dish lined with foil and baste with the oil.

3. Preheat the grill to medium. Grill the chicken for 15-20 minutes until cooked, turning and basting 2-3 times.

4. Serve with a salad or on a bed of rice.

Cook's Notes

Grill = broil. 450g = 1 lb. 150ml = 1/4 pint.
