Salt and pepper the pork chops and sear. Then put the pan in the oven and continue to cook the pork chops until you are done. Remove and set aside.
In the same pan add some butter and cook the apple slices until brown and soft. Remove and set aside.
In the same pan add apple cider and chicken stock. Boil. Add thickening substance and stir. Remove heat. Add vinegar, salt, and pepper to taste.
