Ingredients

5 Boneless, skinless chicken breasts
1 Large can of green chili sauce
1/2 lb Reduced-fat Monterey Jack cheese, shredded*
1 (8 oz) pkg Reduced-fat Cream Cheese*
1 package (10 - 12) tortillas
1 Small can green chilis (mild)

Preparation

1. Take chicken frozen or thawed and boil in water until done. Drain chicken and dice into small pieces. Toss back in pan and add 1/3 of green chili sauce, cream cheese, a handful of shredded cheese, and green chilis. Stir until warm and bubbly.

2. Place a few spoonfuls of mixture in middle of tortillas and roll them up. Place in lightly spayed baking dish (10x13) .

3. Once baking dish is full, spread remaining green chili sauce over the top, sprinkle with cheese. Add olives, if desired.

4. Bake, covered, at 350 for 30 min, uncovered for 10 min. If prepped ahead of time and kept in refrigerator bake for 45 min, covered, and 15 min uncovered.

Cook's Notes

*Original recipe calls for 16 oz of both cheeses, but cutting it by half and substituting reduced-fat cheese drastically cuts down the fat and calories.

Whole family loved these! I used corn tortillas and added some tomatoes to the mix, which seemed to go over well. Looking forward to making these again soon! Yumm!

use whole wheat flour with less carbs and high in fiber cut at least 80 calories per tortilla

I have a version of this and add rotel tomatoes with green chiles to the cream cheese and chicken mixture and warm before I put in tortillas, then cover with cheese and bake... They are excellent

Good tip for any chicken enchiladas: use chicken tenderloins instead of boneless, skinless chicken breasts. boil the chicken in chicken broth or one part chicken broth, one part water. chicken is more tender and flavorful. after chicken is cooked through, shread with two forks.

This dish was easy to make and delicious! If I can get it right anyone can! I attempted to make the contents of the enchilada a little bit bigger..... the tortillas cracked and I ended up with enchilada casserole! Still delicious!! So do fallow the directions when it says a spoon ful!

My kids did love this dish. It was so easy to make and we even had leftovers. The recipe didn't specify but I strongly recommend corn tortillas instead of flour.
