Low-Carb New York Style Cheesecake

My family had a 'low-carb pot luck dinner' and this was one of the desserts. You really can't tell it's low-carb. After my mom took the first bite she hid an extra piece for her to have later! (But don't tell anyone!)

Ingredients

1/2 cup Ground planters almonds

3 8 oz Pkgs neufchatel cheese,

Softened

2 8 oz Pkgs cream cheese,

Softened

1/2 cup Sugar

1/4 cup Granular Splenda

1 tbsp Vanilla

1 cup Sour cream

4 Eggs

1 Pt fresh strawberries

Preparation

Preheat oven to 325 degrees if using a silver 9-inch springform pan; 300 degrees if using a dark nonstick 9-inch springform pan. Spray bottom of pan with cooking spray. Sprinkle evenly with almonds.

Beat neufchatel cheese, cream cheese, sugar, sugar substitute and vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream, mix well. Add eggs, 1 at at time, mixing on low speed after each addition just until blended. Pour into prepared pan.

Bake 50 to 55 minutes or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan.

Refrigerate 4 hours or overnight, Top with strawberries just before serving. Store leftover cheesecake in refrigerator.

Cook's Notes

You can use any fruit you like or none at all on this cheesecake. It's good either way. Check out the carb and calorie count - a traditional New York Style Cheesecake has 24 g carbs & 400 calories per serving.

I am gonna try this reciepe, my mom is diabetic, and one of her fav deserts is cheese cake, but u know the carbs lol..
