Barbecued Sugar-Spice Salmon with Cocoa Recipe

Ingredients

1/4 cup Sugar
1 teaspoon Dry mustard
 Dash cinnamon
1 tablespoon Paprika
1 teaspoon Cocoa
1/4 cup Chili powder
1 tablespoon Ground cumin
2 teaspoons Freshly ground pepper
1-1/2 tablespoons Coarse salt
4 (6-ounce) salmon filets
3 tablespoons Oil

Preparation

Combine the sugar, mustard, cinnamon, paprika, cocoa, chili powder, cumin, pepper and salt. Dip the salmon in the oil and tap off any excess oil. Then dip the filets in the spice mixture to coat both sides and around the edges. Pat the spice mixture in place; you'll have some leftover. Grill the salmon until it just begins to flake, about 4 minutes a side for 1-inch filets, or until it's done as desired.

Yield: 4 servings

I didin't use as much chilli powder as called for, and it was still too much. I would do again and cut back on the chilli powder.
