Quick & Easy Chicken Fajitas

This recipes makes 8 fajitas

Ingredients

2 c Thinly sliced vegetables

2 tbsp Italian dressing for veggies plus 1/4 c additional for chicken stripes

2 pkg (6 oz) grilled chicken breast strips or 3-4 frozen chicken breasts sliced

8 Flour tortillas

Top with low-fat sour cream and shredded cheddar cheese

Preparation

Combine vegetables and 2 tbsp dressing in large non stick skillet and cook for 10 minutes or until tender crisp.

Add chicken breast strips and 1/4 c dressing; cook and stir and additional 5 minutes or until heated through.

Divide chicken mixture among warmed tortillas. Serve topped with sour cream and shredded cheddar cheese.

Cook's Notes

Use a low or non fat dressing to create a lower fat recipe. Red, green and yellow pepper strips, onions and broccoli florest all combine well with the chicken and dressing.
