Hearty Vegetable and Egg Pie

Ingredients

1 c Frozen hash brown potato cubes, thawed

1/2 c Chopped onion

1 tbsp Vegetable oil

1 c Shredded sharp cheddar cheese

1/4 c Chopped red bell pepper

1/4 c Sliced green onions

1/4 c Sliced zucchini

1/4 c Low fat sour cream

8 Eggs, beaten

3/4 tsp Garlic salt

Freshly ground pepper to taste

Preparation

Preheat oven to 400 degrees and spray a 9" pie plate or tart pan with nonstick cooking spray.

Cook potatoes and onion in a skillet over medium high heat for 10 minutes, stirring frequently. Spread in the bottom of the pie plate. Sprinkle with cheese, bell pepper, green onions and zucchini.

In a medium bowl, beat together remaining ingredients and pour into pie plate. Bake for 30-40 minutes or until eggs are set in the center.

Cook's Notes

Optional: Add 1/4 c ham or cooked, crumbled bacon.
