4 c Diced, cooked Rotisserie Grand chicken
1 c Chopped, roasted and salted cashews
4 Green onions, thinly sliced
2 Mangoes, peeled, pitted and cut in 1/2" cubes
2 stalks Celery, chopped
2 tbsp Fresh lemon juice
1/4 c Mayonnaise
1/4 c Plain yogurt
1-1/2 tsp Curry powder
1/2 tsp Ground cumin
6 Lettuce leaves
2 tbsp Chopped fresh cilantro
In a large bowl, toss chicken, cashews, green onions, mangoes, celery and lemon juice. In a small bowl, combine mayonnaise, yogurt, curry powder and cumin. Stir into chicken mixture. Serve over lettuce leaves and garnish with fresh cilantro.
