Grilled Eggplant, Cheese and Roasted Pepper Sandwich

A hearty vegetarian sandwich that is delicious warmed.

Ingredients

1 Large or 2 small slices American Eggplant (1/4" thick), cut in half

1/4 tsp Salt

2 tsp Butter, divided

3 slices Onion

2 slices Asiago cheese

Cracked pepper

Bread

1 Slice provolone cheese, cut in half

2 tbsp Julienne strips roasted red pepper

Preparation

Sprinkle both sides of eggplant with salt and lay between double thick layers of paper towels. Press firmly and let stand for 15 minutes. Preheat oven to 450 degrees. Discard paper towels. Place eggplant on a large baking sheet and roast for 10 minutes, turning once.

Meanwhile, melt 1 tsp butter in a medium skillet. Add onion and cook until very soft, about 10 minutes. Remove from skillet and keep warm. Spread remaining butter on bread slices and place buttered side down in skillet. Place a piece of cheese and eggplant on each bread slice, then top with onions and roasted pepper. Cook for about 5 minutes or until cheese is melted and bread is golden brown. Carefully close sandwich.

Thank you for sharing this recipe. Making sandwich is easy perhaps, but making nutritious one could be hard. Seriously, if eating something like the Double Down sandwich is something you'd do on a regular basis, you'll need money for heart surgery. This Double Down sandwich of KFC consists of two fried chicken patties, 2 slices of bacon, and 2 slices of cheese, with the special "Colonel's sauce." It's a heart attack on a bun, akin to the "Luther burger." They claim it only has 600 calories, but that is hardly believable. It seems irresponsible to sell a sandwich like this when obesity is epidemic in America.
