Parmesan Orzo Primavera

Ingredients

1 can (14-1/2 oz) chicken broth (reduced sodium)
1 cup Uncooked orzo pasta
1/3 cup Water
2-1/2 cup Chopped fresh vegetables (broccoli, carrots, green onions and red peppers)
1/3 cup Parmesan cheese

Preparation

Combine chicken broth, pasta and water in medium saucepan. Bring to a boil. Reduce heat to medium low; cover and cook 7 minutes.

Stir in vegetables. Cook an additional 5 minutes. Remove from heat.

Stir in parmesan cheese.

This is a tasty dish. Its nice for lunch cause its not a really filing dish.

Really yummy. Make sure to use a non-stick pot though.
