Baked Boca Penne

A creamy pasta that makes a hearty meal.

Ingredients

1 jar (26-28 oz) pasta sauce

1 Container (16 oz) lowfat cottage cheese

2 Green peppers, chopped

3 c Mushrooms, sliced (more or less, if desired)

2 Pouches Boca meatless ground burger

6 c Cooked and drained penne pasta (about 3 c dry)

1-2 c Reduced fat mozzarella cheese (more or less, if desired)

Preparation

Mix pasta sauce, cottage cheese, green peppers and mushrooms in 9 x 13" baking dish sprayed with non stick cooking spray.

Add burger and pasta; toss to combine. Top with cheese.

Bake at 375 degrees for 25-30 minutes, or until thoroughly heated.

Cook's Notes

For extra cheesy taste, stir in parmesan cheese into the pasta sauce mixture or sprinkle on as topping.
