| 1 jar | (26-28 oz) pasta sauce |
| 1 | Container (16 oz) lowfat cottage cheese |
| 2 | Green peppers, chopped |
| 3 c | Mushrooms, sliced (more or less, if desired) |
| 2 | Pouches Boca meatless ground burger |
| 6 c | Cooked and drained penne pasta (about 3 c dry) |
| 1-2 c | Reduced fat mozzarella cheese (more or less, if desired) |
Mix pasta sauce, cottage cheese, green peppers and mushrooms in 9 x 13" baking dish sprayed with non stick cooking spray.
Add burger and pasta; toss to combine. Top with cheese.
Bake at 375 degrees for 25-30 minutes, or until thoroughly heated.
For extra cheesy taste, stir in parmesan cheese into the pasta sauce mixture or sprinkle on as topping.
