South of the Border Nachos

To make a vegetarian version, use beans instead of chicken.

Ingredients

Nonstick cooking spray

3/4 c Chopped onion

2 Jalapenos, seeded and chopped

3 cloves Garlic, finely chopped

2 tsp Chili powder

1/2 tsp Ground cumin

1 Boneless skinless chicken breast (about 6 oz) or 1 can of beans

1 can (14-1/2 oz) mexican style diced tomatoes, drained

1 c (4 oz) shredded reduced-fat monterey jack cheese

2 tbsp Black olives, chopped

4 oz Low-fat tortilla chips

Preparation

Spray large nonstick skillet with cooking spray. Heat over medium heat until hot. Add onion, pepeprs, garlic, chili powder and cumin. Cook and stir 5 minutes or until vegetables are tender. Stir in chicken and tomatoes.

Spoon tomato mixture, cheese and olives over chips. Bake 5 minutes or until cheese melts.
