Use reduced-fat cheese for a lower fat version.
2 cups Cooked rice - cooled to room temperature
1 cup Cooked black beans
1 cup Chopped fresh tomato
2 oz Shredded cheddar cheese or reduced-fat cheese
1/2 cup Light italian dressing
1 tbsp Fresh lime juice
Lettuce leaves
Combine rice, beans, tomato, cheese and parsley in large bowl. Pour dressing and lime juice over rice mixture; toss. Serve on lettuce leaves.

I used leftover whole wheat spiral pasta in place of rice and it worked very well. Adding leftover cooked chicken or canned tuna would make this a meal.
