1 Each cut into chunks: medium eggplant, onion, red pepper and zucchini
1/4 c Sundried tomato dressing
1 can (16 oz) undrained low sodium diced tomatoes
2 tbsp Parmesan cheese
1/2 c Shredded reduced fat Mozzarella cheese
Saute vegetables in 1/4 cup dressing in large ovenproof skillet until tender. Add tomatoes. Cook about 15 minutes, allowing some of the liquid to evaporate.
Top with cheeses. Bake at 350 degrees for 15 minutes. Makes 8 (1 cup) servings.
Add chicken to make this a meaty entree.
